May Cheese of the Month featured at the Potsdam Food Co-op The Potsdam Food Co-op's Cheese of the Month for May is Lamb Chopper from Cypress Grove. Purchases of this award winning cheese will receive 10% off for the entire month of May. Lamb Chopper is an aged gouda-type cheese made from organic pasteurized sheep's milk and produced in the Netherlands, exclusively for Cypress Grove. Made with vegetable rennet and aged for at least 3 months, it is semi-firm with an ivory color, smooth texture, and a waxed rind. Its flavor is buttery sweet in the early stages of ripening and develops a delightful caramel sweetness with nutty undertones as it matures. It is an excellent table cheese but also a good choice for cooking because it melts well. Pair Lamb Chopper with Sauvignon Blanc, Chardonnay, or Pinot Grigio wines, or brown ales and porter beer. Suggestions: Serve award-winning Lamb Chopper on a cheese board with sliced apples, grapes, pears, dried fruits, and cured meats, or melted with sautéed mushrooms and polenta. Shave it over a mint, melon, and prosciutto salad. Add it to cold sandwiches, use it in a grilled cheese sandwich with rustic bread, melt it into pasta dishes, or grate it into salad dressing or dip recipes. The Potsdam Food Co-op & Carriage House Bakery is located at 24 Elm St. and is open daily from 8am to 7pm.
